Taco Mac & Cheese



Easy, inexpensive and quick recipes have been our jam lately. I LOVE to cook and enjoy trying out new recipes with fancy elements, but a Monday night after working all day and swim lessons and commuting is not the time for a 20 step recipe. So, enter into the scene - Taco Mac & Cheese. This meal is super inexpensive, very quick, plus my toddler and my husband ate it, so that's a huge win for me.


There are a ton of versions of this recipe floating around the internet and mine is a little combo of them all. I typically use ground beef, but ground turkey is a good substitution. You can also use any pasta of your choosing and add in shredded cheese, but the boxed mac n' cheese just makes my life easier.


I want to point out that we don't eat like this all the time. Neil isn't a huge fan of pasta or casseroles and we typically eat (especially dinners) on the healthy side, but give me a hectic workday and a limited amount of time and I will give you Taco Mac & Cheese!


The Ingredients

  • 1 box of mac & cheese ( I buy Annie's organic macaroni and cheese)

  • 1 lb. ground beef

  • 1 Can (15 oz.) diced tomatoes

  • 1 packet of taco seasoning

  • 1/2 medium onion, chopped

The Process

  • Brown ground beef along with the chopped onion while the macaroni boils

  • Add cooked pasta, as well as the cheese powder, diced, tomatoes and taco seasoning to the ground beef

  • Simmer mixture for about 10 minutes

  • Serve hot with your favorite toppings!

So easy! I love to add shredded cheese, sour cream & diced avocado on top of mine. Hope this quick & inexpensive recipe makes someone's life a little easier this week!
