Pumpkin White Chocolate Chip Blondies


'Tis the season for pumpkin, and these pumpkin white chocolate chip blondies are the perfect way to get your fix. The funny thing about how much I love this recipe is that I'm not a huge fan of pumpkin (although if you happen to have an extra pumpkin cream cold brew on your hands I will gladly help you out) or white chocolate, but somehow together it works, and it works wellll.


I've been making these blondies for a few years now and every year I am surprised at how much I love them. The recipe is super easy and the blondies come out moist and perfect every time. They're also easy to store and you can keep them covered for up to a week.

Obviously, Halloween is right around the corner and if you happen to be the Halloween hostess like I am, then you will definitely want to have these on hand, but don't forget about them when Thanksgiving rolls around either. They are a great (and more delicious in my opinion) alternative to the traditional pumpkin pie.

Pumpkin White Chocolate Chip Blondies

Servings: 24 bars

Ingredients:

  • 2 sticks unsalted butter

  • 1/2 cup brown sugar

  • 1 cup granulated sugar

  • 2 teaspoons vanilla

  • 3/4 cup pumpkin puree

  • 3 cups all purpose flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 tablespoon ground cinnamon

  • 1 tablespoon pumpkin pie spice

  • 1 1/2 cups white chocolate chips

Directions:

  1. Using a stand mixer, cream the butter with both sugars. Add vanilla & pumpkin. Mix until just combined.

  2. In a separate bowl, combine the flour, salt, baking soda, baking powder, cinnamon & pumpkin pie spice. Add to wet mixture.

  3. Fold in chocolate chips

  4. Line a 13x9 pan with parchment paper, or grease the dish. Press dough evenly into dish.

  5. Bake at 350 degrees for about 30 minutes, or until the edges are brown and a toothpick inserted in the middle comes out clean.

  6. Allow to cool before cutting

  7. Keep extras covered. Store up to one week.

This looked so good! I've never had a blondie before but I love the combination of brown sugar and vanilla, I'm sure it smells heavenly!
